Criss Cross! Peanut Butter Cookies



I'm not the best cookie maker in the house.


The best cookie maker would be my husband...he is a magic man with cookie dough.


But, there are a couple cookie recipes that I can have success with time after time:  one is snicker doodles and the other is this peanut butter cookie recipe.  I have never had a failure yet.  This cookie comes out crispy on the edges and soft in the middle, which is what I consider a perfect cookie!

Peanut Butter Cookies

Preheat oven to 375
Bake about 7 minutes
Yield:  about 3 dozen

1/2 c. butter, softened
1/2 cup CHUNKY peanut butter (chunky is the secret!)
1/2 c. white granulated sugar
1/2 c. packed brown sugar OR 1/4 c. honey
1/2 t. baking SODA
1/2 t. baking powder
1 egg
1/2 t. vanilla
1-1/2 c. (or slightly more) all-purpose flour
*granulated sugar to roll cookies in before baking

1.  In a large mixing bowl, beat butter and peanut butter with an electric mixer on med. to high speed for 30 seconds.  Add the granulated sugar, brown sugar, baking soda, and baking powder.  Beat until combined, scraping sides of bowl occasionally.  Beat in egg and vanilla until combined.
Beat in as much as you can of the flour with the mixer.  Stir in any remaining flour.  If necessary, cover and chill dough until easy to handle.

2.  Shape dough into 1-inch balls.  Roll in additional granulated sugar to coat.  Place balls two inches apart on an ungreased a cookie sheet, and flatten with a fork in a criss cross pattern.

Bake in a 375 degree oven 7-9 minutes or until their cute little bottoms are lightly-browned.

 (Underbaking is preferrable to overbaking, so take them out slightly sooner than when they are browned on top.)

When done, remove from cookie sheets and allow to cool on a wire rack!

My hubby LOVES peanut butter cookies, but I can never make them very good. I am definitely going to try this ... as soon as I get some chunky peanut butter!

Peanut Butter cookies are one of my weaknesses (I love PB cookies) however, just made a batch of oatmeal cookies that we must finish.

Trivia Question~ How many oatmeal cookies can one eat that would equal a bowl of hot oatmeal.... I wanna say 6 ;) *LOL*

Thanks for that recipe. You know, I haven't had peanut butter cookies in years and I've never had them with the 100% natural peanut butter that I now eat and I want to try that. Tomorrow is the super bowl, so I think I'll whip up a batch!
