Lip Smackin' GOOD!







Every spring, I say I'm gonna do it.

And then I don't. 

I don't know why?!


Rhubarb is easy to grow:  plant it and pretty much forget it!








But this year, I did it.








I made strawberry-rhubarb jam.

Now, this is something quite different from your average jam.

Rhubarb has a different texture, and as you know, a more tart flavor.

BUT TASTY.

Substantial.

TART.

My son, the picky eater, just LOVES it.

(He will pick up a clean stalk of rhubarb and bite into it!  
That makes me SHIVER!!)

But with this jam on his peanut butter sandwich, 
not one bite is ever left!

SUCCESS!!

Oh.  How did I make it?

Well, I winged it.

I cut up a whole bunch of rhubarb, in small pieces.
I got frozen strawberries out of the freezer.
I added lemon juice.
I added just enough sugar,
and some strawberry jello for color,
and I cooked it to a decent consistency.

Then, I put it into sterilized jars, with hot lids, and processed for twenty minutes.

I do like rhubarb! It used to grow here, but a few years ago it quit coming up. My mother-in-law has plenty though. Hopefully we can get some from her this year. I'm thinking of starting some here again from one of hers. That's where hers originally came from. It's time to bring some back home!

Hi Joni,

When I was little, I liked eating rhubarb raw , as you might say.

Now , I just make it for my dh and his friends to take to camp every year in a strawberry rhubarb pie that I have yet to taste !

Do you cut the stringy outer layer off first before you process the rhubarb ?

That jam looks so yummy !

Yes, I love rhubarb!!! I've never made rhubarb jam, but I bet it is DELICIOUS!!! I make strawberry jam, and apple butter, and peach jam. It's hard to beat homemade in my book! I love your blog :0!

I do but ours is so tiny this year -- probably due to all the cold, rainy weather we have had this spring:(

Yes, we also love and eat lots of rhubarb. But this is the 1st time I hear about rhubarb jam :-) We use it in compote and e delicious rhubarb pie.I have in plan to post my rhubarb pie recipe soon.

I LOVE rhubarb, but the rest of my family don't, so i don't bother growing it.
I occassionally buy a bunch and stew it to put on my cereal or to have with ice-cream...
That jam looks sucha beautiful colour and i just know i'd love it..
